Peach Cobbler Cookies: A Sweet Southern Treat

Love peach cobbler but want something handheld and easy to share? These Peach Cobbler Cookies are everything you adore about the classic dessert—juicy peaches, warm cinnamon, and a buttery crumble—all in cookie form. Perfect for summer gatherings, holiday cookie swaps, or a cozy afternoon treat.


✅ Ingredients:

For the Cookie Dough:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

For the Peach Filling:

  • 1 cup fresh or canned peaches, finely diced
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon cornstarch (to thicken)

For the Crumble Topping:

  • 1/4 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 2 tablespoons butter, cold and cubed
  • Pinch of cinnamon (optional)

Instructions:

1. Make the peach filling:
In a small saucepan, combine diced peaches, brown sugar, cinnamon, and cornstarch. Cook over medium heat for 5–7 minutes until thickened. Set aside to cool.

2. Prepare the crumble topping:
In a small bowl, mix flour, brown sugar, and cinnamon. Cut in the cold butter using a fork until crumbly. Refrigerate until ready to use.

3. Make the cookie dough:
In a large bowl, cream the softened butter with granulated and brown sugar until light and fluffy. Add the egg and vanilla, mixing well.
In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet until combined.

4. Assemble the cookies:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
Scoop tablespoon-sized balls of dough and slightly flatten each one. Use your thumb or spoon to make a small indentation in the center. Fill with 1–2 teaspoons of peach mixture and sprinkle with crumble topping.

5. Bake:
Bake for 12–14 minutes or until edges are golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.


Tips:

  • Fresh peaches are great, but canned or frozen (thawed) peaches work too!
  • Want extra flavor? Add a pinch of nutmeg to the dough.
  • For a drizzle, mix powdered sugar with milk and vanilla, then lightly glaze the cooled cookies.
